Have around 600 miles on my powerboost, excellent so far.
But noticed that in stop n go traffic temperature went up to 220.
Drops to normal when you get up to speed.

Had a C4 Corvette, in traffic would go to 235, supposedly to meet emissions

GM in particular designed some engines that deliberately ran hotter for emission purposes. I don't recall hearing that about any other manufacturers.

Pay attention to when your electric fans kick in. If you;re stopped in hot weather, slow moving traffic the fans will govern temps. But pay attention to other indicators such as fans, since the display tells what the programmer wanted you to know. They don't necessarily show reality. I had a minor transmission overheat and the display went from middle of the band to red line suddenly.

So you must have enabled digital temps right out of the box? :)

I'm not trying to be the alarmist here, but I think the Gen3 3.5 Ecoboost's normal engine coolant temp range is ~184-200F. Typically.
I haven't seen 220F in a non-towing circumstance.

Ford had the Gen2 (2017-2020) running hotter (205-216F), but it appears that they could get away with lowering the Gen3 back down after adding the EGR.

Now the IAT's on the Powerboost?
That's another story. Pretty brutal intake temps if the truck is going in/out of EV mode.

I wanted to post about this exact same topic. ‘24 Lariat PB 501a. Noticed this past weekend on a family drive up a -3 mile decent incline going ~40mph at sea level, outdoor temp ~68°, saw that the coolant got up to 218°. Seemed excessively high temp for just having 2 adults, 2 kids under 3 and not pushing it. I’ve never had a vehicle where the coolant temp fluctuates like that. Had I been towing in the desert heat, I’d get it. Noticed the temp started going up fast when again I was driving up a slight 2 mile incline at 45mph today. This is normal??? What would it be like towing up a mountain in summer heat?????

The thermostats fully open point is 218 degrees. On the other hand the slats on the front are controlled by the PCM and if they're not open, no air is getting in. One test you can do is to turn MAX AC which will both open the slats and turn on the fan. See if this makes any difference (with ICE running). If so the truck is demanding the temp to be that high.

The higher temps help to get rid of fuel and moisture in the oil, prolonging oil life. Additionally combustion is more efficient and emissions are reduced. With the PCM having full control over the air entering the rad, it's operating as intended. This has no bearing on the truck's ability to cool as it appears it's not trying to cool itself at all and running the temp it wants to be. Also keep in mind that when the ICE is off, no coolant is flowing so you may appear to see max heat at that point. You can also try tow/haul mode which prioritizes cooling.

On a 2017-2020 3.5 Ecoboost that would be completely normal coolant temps for an ascent up a mild grade. (OEM thermostat and PCM calibration)
And 218F is not a hot coolant temp by any means. It's almost perfect for targeting emissions and efficiency.

However, the Gen3 3.5 Ecoboost (2021+) Ford did lower the coolant temp range back down to similar temps of the Gen1 3.5 Ecoboost. So I do find it unusual. However, Ford might have made changes to the 2024 and we will find many others with 2024's confirming?

Note that I am ONLY discussing the 3.5 Ecoboost. (as well as the Powerboost)

2022 PB here on Michelin 10ply 34.5 in tires and Bilstein level kit.

Upgraded intercooler, catch can, cold air intake, Borla, tune, and removal of the auto air Baffle.

Temp are always "great" even when towing 6K lbs. And it's pretty hilly in the Ozarks.

I was driving an STX for a while and noticed that when the AC was on it kept the engine at exactly 190 degrees all the time but as soon as I turned off the AC, the engine temperature would start rising fast into the 200+ degree range which seems odd.
The same thing happens with my 2024 STX 5.0L when not towing.

Appreciate the cooling explanations given by HammaMan and Snakebitten.

Tow a 4900 pound travel trailer using tow/haul mode, so far momentarily see up to 215F transmission and engine oil temps with AC on towing up short 7 & 8% grades in the eastern US. Going to try MAX AC next time. Our STX does not have MAX Tow package.

I guess just to add some data: I typically see the engine settle into the 190-200 range on my 24PB. I've seen it get up to 210 when stuck in creeping traffic on a hot FL day. I haven't towed yet so I can't speak to that.

One thing I noticed on this tow trip that I'd never seen before, is numerical values under the indicator dials.

Can't recall the exact numbers but they'd come and go.

Also can't recall if it happened on the trans temp indicator as well.

Just caught a flash of it a couple times.

Forscan has never seen my truck, so what ever it is, is stock.
