The wife an I are in the beginning stages of a reno/addition and am looking into a garage. I'm curious to see what sizes you guys have. I'm thinking at least 26'x26' and I know everyone says the bigger the better but, I think that's as big as our property will allow. Anyway, ideally I'd like to be able to open at least 1 vehicles doors and some room for a workbench, any thoughts

I fix software bugs!
Mine is 30d x 35w with 10’ ceilings and 8’ garage doors. One door is 10’ wide, the other is 16’. I park on the left and can fully open the drivers door. The passenger door can open pretty far too unless my wife parks to close ?

I have a 24x24 pole barn I built this year. I can fit my truck and wife's bronco sport but it is tight. It's perfect size for my tools and my truck.

That looks great! I think 24x24 is the smallest I'd go

If I could have went bigger I would have. Any bigger and I would have needed engineering of a stormwater management plan. Not worth the trouble for the maximum size of 24x30. I did go with 10' walls and scissor trusses to really open it up with the limited floor space

My garage is 20' by 20' (house was built in '68). We get a Lightning and Model Y in, it is SUPER tight. I've got a lawnmower, tool box and a couple of shelves - one of them had no lower shelves and I pull the truck right into where the lower shelves are. I think I make the absolute most out of that space I can.

I would say build as big as you can, and it seems like you've figured that out. I wouldn't go any smaller.

I would love to build a house, the house I don't need more than 1800 to 2000 sq ft, but the dream is to have a garage / shop with 3 10' doors wide at least 30' deep.

Big as you can afford and legally build.
24x24 is as small as I would go preferably 24x30 with high walls.

That's not what I see in my head when someone says pole barn. Looks great for the space you had available.

One thing that no one usually considers is height. With a high enough garage you can put double stack lifts in, and turn two spots into four.
unfortunately we're planning a bedroom above the garage, but I'll try to squeeze out as much height as possible
