... A professional truck driving friend, in fact, he teaches truck driving safety, has a 2021 with tow mirrors. Said they are overly big. A real PIA and cautioned against them.
They definitely create a blind spot at ~10 o'clock. That would be a pedestrian in a crosswalk when turning left. But, to me, the rear/side visibility gained more than offsets the visibility lost.

Well it's worth more than double its upgrade price to sell it. Quite a few regret not getting it. Haven't seen a single person say they wish they didn't. Take it FWIW.
I'll take it as valuable advice.

I located a used truck through CarFax that checks many boxes. Being a 2021 MY it had auto-stop/start removed. Is that relevant in a Powerboost? Will the ICE not stop, in favor of the DC motors, when appropriate?

It's 2021 6.5' 501A 4WD PB SCrew w/ tow package (not MaxTow) and Co-Pilot 2.0 Assist w/ 360-degree cameras. It lacks tow mirrors but that has less importance to me than I previously assigned.

Edit: On viewing pics, it does have electric folding tow mirrors.

Does Co-Pilot 2.0 Assist include BLIS? I think so?

BLISS is on everything but very low trims. Assist is BLISS and so much more. A minimum feature IMO. It's a whole other vehicle with assist 2.0 and active 2.0. I got rid of my first powerboost in less than 5 days due to not having assist 2.0. Anyone buying one of these trucks and not getting assist or active and 360 cams is really shorting themselves. I won't own another truck w/out either of those 2 features as a minimum. If it can't self steer, it won't be found here :)

Getting electronic driving aids (including 360-degree cameras) is the only reason I'm considering upgrading from what I have.

What's the diff between assist and active?

Hmm.. No 2.5KW inverter? Nothing is mentioned.
PB has 2.4 inverter as the base, the 7.2 is the upgrade.
Active is assist w/ the ability to remove hands, only on pre-mapped highways, below 81mph.

It's the same software as far as steering capability. The new software stack for it, BC 1.2 does have improvements in it, but it's features that will be brought to the assist version as it's core functionality. That new software stack may already be in 2023 assist vehicles but I haven't seen it mentioned. I'd have to drive a 2023 to see if it's in it. 2023s are getting unique software that the 21s and 22s aren't (at least in the mach-e).

I'm not sure what MME trims get the assist as standard, I may go find one to drive and test it out. It'd be readily apparent to someone well versed in the behavior of the system such as myself. I use it in 95% of my driving if not more.

Do the self-driving functions work when towing?

2023 PB 501a 4x4 short bed 7.2KW. PL=1658lbs.

I have no use for Blue Cruise, where you get hands free but are constantly pestered to keep eyes on the road. To me, it is just kinda creepy to have those sensors constantly looking at your eyes.

But the one just below that, sounds very useful.

To answer your question, I don't think BC works when towing but I believe the others do. Which ones exactly, I'm not sure, there have been so many derivations, I've kinda lost track. Some do, for sure.

Depends on what you're towing if you'd even want to use it. If you have a large unwieldy trailer it can induce unwanted self-induced feedback oscillations. I believe the hands free variant doesn't work, and even if it did I still wouldn't remove hands. You've got much slimmer margins for error towing.

I agree. While I'm not so negative about self-driving, in general, the manufacturers are still on the vertical part of the learning/improvement curve and prices are still at the high plateau level. Within a few years it will be ubiquitous, more capable/reliable, and cheaper.

Other than the self-driving bits, do later models have hardware that is not present in 2021 models, that would prevent upgrading the assist functionality in 2021 models lacking that hardware?

Assist 2.0 is the cruise radar, steering wheel button, and possibly the IPMA, but I'm not sure if it's different. May have to run the wires for the cruise radar.
