Thank you so much everyone. I'm going to see if I can drive a 2.7L just to get a feeling but you all raised some great thought points in regards to towing that have ben considering staying with my original desire for the 3.5 but maybe - just maybe- the 5.0 if all other aspects are there. I just don't want to settle too much to get...

FWIW, there is a online video that compares the towing performance of the 3.5 and 5.0. While both are capable the tester points out the naturally aspirated 5.0 performance suffers a bit at altitude compared to the twin turbo 3.5
