Over air updates vs taking it in to the dealership question ?

A buddy of mine were discussing how all Car/Truck companies now spy on you some sort of way.
Some may do all the details and some may do just basic info .
So my question for anyone that knows is , taking it into the dealer vs over the air updates. Is there any difference when it comes for them scanning your info ? He says when you take the vehicle in to the dealer, they cant scan your info. Does this hold true ?

The truck is always talking to the ford mothership. I don’t think it matters which way. In the end, they already got the info.

A while ago ford did an update and wiped out peoples tunes. They could shut off your vehicle if they wanted.

I turned off my over the air connectivity. You can do it in settings. When I had a problem they didn't have any of the data they normally get when it's turned on so I think it does actually turn off their access of you want it to. I'd rather not have them do random updates, I can wait and see if one causes problems and if not turn it on to do the update. Also, I'd always try and over the air before I take it to the dealer cause my truck was just in the shop 5 weeks for the rest view camera recall cause they had a problem loading the software. I never would have taken it in if I know it wasn't loading since my rear view was working fine. They have to wait for Ford to give them ideas and your truck just sits for weeks while Ford thinks about it, so the time perfectly driveable but they won't give it back in between tries or Ford doesn't pay them for the work.
