Alright, version 5.25 still works. Has climate controls. I installed from APK Mirror this time. Have to install their installer, give it storage access, then install the apk, turn off auto updates in Play store, then uninstall the APK Mirror installer.
I was told by George at the Ford Pass Call Center that the issue is going to be resolved in version 6.2.0

Knowing the staggering incompetence that oozes from Ford's app dev team this will probably be taken away soon.
