So where is one expected to hook up the negative connections for a winch?

The manual is just saying don’t hook any accessory directly to the negative post. To me, this sort of defeats your idea of getting a dual post battery which is why I pulled that quote up for you. Although, the positive 2nd post would be fine to use for the positive lead of the accessory.

Hook any accessory negative lead up to an existing ground on part of the metal frame/chassis (which is negatively ground on USA cars since about 1960), or drill a new hole on frame/chassis and install it that way.

Remember the ground cable for the winch must be sized the same gauge as the (+) cable, with both based on the gauge for the required total positive and negative round-trip cable length and maximum amp load. Here's a conservative calculator: Circuit Wizard - Blue Sea Systems

If your calculated winch cable gauge is smaller than the OE battery negative (ground) cable, you can ground to any convenient chassis-ground point near the winch, the circuit will be completed through the chassis and the OE battery negative cable.

If your calculated winch cable gauge is larger than the OE ground cable, see the pic (this will keep the BMS shunt between the winch-negative and the battery where it should be, without overloading the OE ground cable):

Running a cable to the battery as pictured above is likely the most robust and secure solution, not dependent on good ground connections through the chassis.
