Ive installed Katzkin covers and before removing the front seats I disconnected the battery and left it overnight. Made sure I installed the airbags correctly as part of the katzkin install but I am still seeing the notification above the rear mirror that they are off, even though everything is installed correctly.
No fault codes in forscan and I have rebooted the RCM, but still remains an issue. No CEL.

Any ideas?

This happens when the system detects any connectivity loss to an airbag when 12v power is supplied to them. Sometimes cycling the key/push button a few times to see if it clears will resolve it. If not then disconnect the 12v battery. Check under the rear passenger seat for an aux battery. Some trucks with ProPower and all Powerboost models have a aux 12v battery located there. If present disconnect it as well and cycle the key/button to drain any residual power in the modules. While disconnected double check all seat harness connections resetting them to make sure everything is properly connected. Give it about 30 min total then reconnect the 12v system. Provided everything is connected correctly the airbag light should clear. If not then check for codes to see what's present.

There's no magic voodoo you can do to make the airbags work if the system isn't connected property. It's pretty much go/no go as tested at every key cycle (it's also not a monolith of all or none)

That said, the indicator light in the overhead console indicating the status of the passenger seat's airbag is based on the weight placed on the seat bottom of the passenger seat. If your SRS system is in conflict there is very much an SRS MIL in the gauge cluster and associated code that will show up in more than one module. Reach under a seat and unplug it to see what it does. Plug it back in and it's gone on next key cycle.

You can start the truck and get into the passenger seat to see the airbag turn on/off based on the weight in the seat.

As i said, definitely no MIL in the cluster and no codes in any modules. That's what has got me stumped.
The status does not change with anybody in the seat.
