I've owned the 3.5 and the 5.0. I'm going back to the 5.0. The 2.7 is a good motor. Check out this video.
Which F150 engine would a Ford Technician pick?

I have seen this video. I have a new one on order and I went with the 5.0. Trucks and V8's just go together!

I had a 2018 with the 2.7 and I loved it! It was my daily driver driving about 25 miles a day, half city half highway and I averaged 19.5 mpg on eco mode. Only towing I did was light uhaul trailer or a bed load of furniture when I moved, with no issues. My 21 has the 5.0 and I believe, even the 2.7 in sport mode wouldn’t have any troubles keeping up with “spirited driving.”

I always read that the 3.5 was better for towing, but unless your towing frequently or have someone that needs that extra towing, I’d just get the 2.7, you won’t be disappointed!
