I have a fox 2.0 level, considering replacing the UCA’s. Is it pretty straight forward as it seems? If alignment is required should I just have a shop do the install and alignment afterward?

Changing to an aftermarket UCA will warrant an alignment sooner or later.

Def can be a DIY install. If you installed the leveling kit on your truck it is almost the exact same steps to install the uca. I would recommend an alignment right after install, when I did mine everything was way out of wack in the front end.

I didn’t do the install of my coilovers. Looking at the install instructions from camburg, looks pretty straight forward for the UCA’s tho. Shop wouldn’t give me a price they would only say it would be a couple hours at $149/hour for the install.
