This is a lazy question, but I’m going to ask it anyway. Any issues with using the 120 V outlets in the cabin of the truck while driving/operating to power an electric cooler for example?

Yes you can power things while driving. Now can the outlet handle the draw it all depends on the output of the outlet and the draw of the cooler. I see on your profile you have a powerboost so you shouldn't have any issues powering a full fridge if you wanted too.

Thanks so much for your reply. I’m looking at getting a small cooler for road trip type usage. And since I have the 120 outlets on the front dash and the backseat area, there’s really no need for any type of 12 V system needed for the cooler.

Even the base inverter in the powerboost will power anything you can plug into a house outlet. If the load is greater than ~400w it may want the generator button pushed on the dash. About the only thing the generator button does is prevent the auto shutdown of the truck if left alone with key in run for longer than 30 minutes idle.

It's not practical to run a fridge in the truck "ONLY" on the 120V outlet in the truck.

Once you turn off the truck the fridge will also power off unless you keep the truck in generator mode, which is not practical in my experience. The better solution is to have a power station between the trucks 120V outlet and the fridge.

I would recommend getting a portable power station around the size of a Bluetti AC70 or better. It easily runs my Dometic 55 fridge for over 2 days with the truck completely off. Just plug the portable power station in the trucks 120V, and then plug the fridge into the portable power station so that the fridge always runs off the portable power station. Whenever the truck is running you would be recharging the power station too. The Bluetti AC70 can fully recharge the 768 watt power station capacity in slightly over one hour from dead with a powerboost 20amp circuit drawing over 900 watts between 20-80 percent full. For those with a 400w outlet it would take longer, but it still works pretty darn well for those trucks too. For camping, I plug my microwave oven directly into the trucks 120V outlet though because I am too cheap to buy a portable power station that has a big enough inverter like my truck has and I only need it for a couple minutes...perfect for generator only mode. If my truck only had a 400 watt outlet I'd buy a Bluetti AC180 so I could do both the fridge and microwave at the same time.

Well said.

I picked up this cooler and an Instant pot for our 10 day road trip from Granger to Northern California. Cold beer and a hot meal every night in the hotel room. Fits perfectly in the backseat.

We used an ice maker, I charged a Lifepo4 battery pack up which keeps our 12v fridge running 24/7, charged Milwaukee batteries up at the same time and also camera/drone batts.
We have the 2KW pro power on board and it works great, I also powered it to our off road trailer to charge it batteries up .

I ran a crock pot in the cab while driving to tailgating a couple times. It has low enough draw I didn't even have to put the generator on, low power mode was sufficient.
