It takes that long via FDRS because it's transferring via the canbus which is painfully slow by today's standards. If updated via OTA, I believe it transfers over the vehicle ethernet network taking a fraction of the time.
You can unplug the mongoose while transferring files, but a USB hub makes it a lot easier. The first time I did updates I didn't have a hub and was able to do things by unplugging the mongoose when needed and had no issues. I have since gotten a hub and it makes things faster since I'm not...
That can happen. If there was a little water in the road, and glare can cause the camera to lose the lines enough that it won't enable. Similar to driving at dusk/dawn going towards the sun.

Did it say that the battery was low or that the truck was in deep sleep? Regardless of voltage, the truck will enter deep sleep if there no use after 14 days. If you were gone for 2+ weeks, what you may have seen could be normal.
From searching about the topic, oil sheer is VERY common on the 3.5 Ecoboost and very few oils didn't have the issue. Everything I've read made it seem like it sheers down to ~5W-20 fairly quickly, but stabilizes there until changed.
Yes, if I lift it just shortly and hold, the motor kicks in and takes it the rest of the way. Occasionally though, it doesn't matter how far I lift it or how long I hold it, the motor doesn't want to go and I need to manually close it
Your biggest issue, in my opinion, is going to be finding something that has enough lift height to get the tire off the ground, especially in the rear. For capacity, I'd say 2 ton minimum, 3-4 ton to be safe. Even though you'd never lift the full weight of the truck, you don't know how...
This isn't displayed in the OPs pics or the discussion here, but how would a driver cause cupping wear? What about worn inner edges of tires? I've never once seen abnormal wear blamed on the driver with the exception of outer edge wear and hard cornering or if someone is doing burnouts.
