I had 5100’s installed all around on the OEM Hankooks as well as an alignment. Subsequently replaced the tires with stock size Falken Wildpeaks. Should I do another the alignment now that I have new tires?

Tires don't need alignment. If you're not having any issues and you track straight, you should be fine. Any abnormal wear on the old tires?

I don’t recall. The reason for asking the question is that I had the truck into the dealer for unrelated work and the tech pointed out that there was some wear on the outside shoulder of the front tires,

Depends on the miles between old tires/alignment and new tire install. Most alignment shops will check alignment for free if they did alignment last. If it were me, unless it's been less than a month since the alignment I'd bring it in to double check everything's in spec...
