Mine doesn't, at least not in every case. When I turned it on last night, I saw that it asked if I wanted to remain in Eco mode, which was the last used setting.
Yes it does ask, but will revert to normal, if the question is answered somewhat quickly in the afirmative.

In your case, I could foresee a more likely scenario being that you'd want to turn on the cooled seat feature a few minutes before you get into the vehicle, so that you don't burn your rear from the seats that have been baking in the sun for hours.
This is a very valid concern, but with my '17 I started using the weathertech full car kit window sunscreens and it really keeps the temps down (esp on the black leather). It's somewhat of a hassle to put in and take out, but I've gotten it down to about 2 minutes as long as I just throw it in the back seat :)

With the PB I could probably use the remote start more, but in my '17 it would eat up gas unnecessarily (IMO), so I just got used to not using it.

I have started doing the "Keep it running while you go into a store" trick...LOL. God I love my PB :)

I really like the drivers seat remembering so I can just leave it on low heat all winter, but wish the passenger seat was auto off. My OCD can't handle seeing it on and no one sitting in the seat. I'm a 38 year old grumpy old man - it's going to wear out quickly! It's a waste of electricity!
