Actually, the battery Monitoring Sensor and the Electrical Energy Management system sense and use both voltage and current (amps) to determine the charging curve (as with most sophisticated chargers, both volts and amps are variable when charging).

Perhaps of interest is the attached, which though specific to the 2.7 / 3.5EB, is the same for the 5.0.

I think this is the important detail regarding changing the battery, regardless of the capacity.

Battery Replacement
If the vehicle battery is replaced, it is very important to perform the battery monitoring system reset using the diagnostic scan tool. If the battery monitoring system reset is not carried out, it holds the old battery parameters and time in service counter in memory. Additionally it tells the system the battery is in an aged state and may limit the Electrical Energy Management system functions
