Discount Tire is selling Blizzak p275/65R18 winters for $188. The tire has A load rating of 114, slightly lower than what shipped in my F-150 (116). The most I tow is a cargo trailer that can weigh up to #7000. My gut reaction is losing about #150 per tire in rated load probably will make no real difference as my truck max loaded would never weigh #10,400 (4x2600).

Is my thinking correct or am I out to lunch?

Maybe? It's really difficult to make any judgments without knowing a LOT more about your situation.

Since a light duty truck's payload is frequently the limiting factor when determining towing limits, that will likely drive your decision/comfort level much more so than tire load rating. For what it's worth, tire load ratings are usually not the limiting factor when determining towing limits, so reducing your tire strength a bit is probably not going to affect your towing capability much...provided that you otherwise could tow the same trailer/load within the tow ratings using your stock tires.
