I believe it's buried in a menu somewhere, or you can see on the fordpass app. Also I'm pretty sure the menu it is in is not accessible while the truck is moving.
I don't have the keyfob start on my XL either, but I found that the truck doesn't like to remote start from the app in the morning because it is not "awake." If I just remotely unlock or lock the truck from the keyfob that seems to be enough to wake it up and then remote start from the app works...

If I remember correctly, the whole shaft can rotate after the nut is loosened, and since it is threaded, that is what allows the pedal to adjust. Rotate one way to move it forward and the other way to move it back. If you take a picture of yours I can see if it looks like what I remember from mine.
