Scenario: the truck sits overnight, or maybe even several days. I go to start it, and it starts/runs, and my transmission appears to be pre-warmed, already halfway to full operating temperature! This happens every time I first start it. The dealer technician said this was normal. I'm really struggling to believe that.

In the normal amount of time, the transmission does fully warm up to normal operating temperature - "12 o'clock", straight up and down - and has not exceeded that, even when towing. But when the gauge reads that it is already at 10:00 when it is first started, it makes me doubt the accuracy of the gauge, and THAT is my real concern! Any thoughts?

you really need to get in forscan and put temps above gauges
then you can see

mine starts at ambient and does warm up pretty quick at idle, it was 79 outside and already used 1/4 of the gauge sweep
you see by your sweep on the gauge compared to mine after 5 minutes of idling
these were taken when i tested my ac to confirm ac temps
1st is truck engine OFF but acc power on to
2nd is after it warmed up a bit
you can see the sweep looks like a lot, but its really not

Good observation, Powerboatr. I went back and checked, and you are correct - with the ignition "ON" but engine off, my transmission temperature gauge is like yours - the readings appear to actually "start" at 9:00. Then when started, it most rapidly (almost immediately) jumps to 10:00, then starts warming up until it is at 12:00, which functions as normal. It had never occurred to me that the "starting" point on the gauge was relative to where Ford wants the indicator to be when at normal temperature.
