Handicap Hand Controls - Gas/Brake Paddle Switches?

So hey guys,
I just had surgery 3 days ago, below knee amputation on my driving foot . Very bummed about how am I going to drive this new 24 Powerboost that I have fallen in love with.
I have researched a little bit, they make like a lever that is mechanically tied to brake and gas pedals - which I do not like at all.
I really want like paddles on the back of steering wheel that I can control gas/brakes (much like the Raptor paddles for gears)
Does anyone know if this can be done ? I haven't dug real deep but thought I'd ask all the smart people on here 1st. Even thought of emailing Ford engineers to ask them.

Also , a side note- I know it's not good to let Powerboost sit for days/weeks that cause battery issues...Will remote starting solve this issue you think? I remote started today hoping it would avoid issues .
Any help would be appreciated as always.

Amputation was due to diabetic foot infection I had for many years, kicked that can down the road long as I could.

Remote start will only work 2 times (I have read) before needing to regular start. As to the other I have no input.

A '24 ford already has the fuel control lever on the center hub, right side.

More seriously, the hand operated throttle was standard for early automobiles; Ford didn't have a gas pedal until the Model A replaced the T.

Another possibility might be to shift the pedals to the left, and drive left-footed. I had to do this for a week when I had a rock-hard blister the size of a golf ball on the bottom of my right foot. Adjusting to left-foot driving was trivial. [it also meant my wife driving the older kids to school, as I had to take the car {a 1992 Eldorado Touring Coupe} from them, as my car at the time had a manual!]
