The AT&T wireless service you pay $20.00 a month for is just for devices (phones, iPads, etc.) that want to connect to the internet? I used Android Auto so is my phone irrelevant to that wireless service because it is hooked up to Android Auto? Or can my phone be hooked up to that wireless too even though is running Android Auto? I just can't see paying $20 for something I'm not going to use. Thank you.

If you are physically plugging your phone into your truck to use wired Android Auto, then yes, your phone will use the built-in hotspot. If you are using wireless Android Auto, and want to continue doing so, then no, your phone will not connect to the hotspot because it uses its wireless connection for AA.

I use the wired method so that my phone can access the modem. The $20/month for unlimited data is currently cheaper than updating our current (archaic) phone plan to unlimited, with the added benefit of being able to use laptops/tablets, etc without having to use a hotspot from our phones. So there's value for my personal situation, but if you are already paying for a premium unlimited wireless plan, then it doesn't make much sense to pay again for the truck's modem.
