I switched from K02s to the Defender LTX M/S2s this year in stock size (275/60/20), and couldn't be happier, especially compared to the 18" Goodyears that came on the truck. My truck is also a 6 1/2 foot bed. Tire pressures make a huge difference (I run mine at 38 psi unloaded, 44 psi towing)...

Honestly, I'd look at another set of rims. In my time in the online car community, nothing good usually comes from using wheel adapters... Typically you end up putting extra stress on ball joints, battle weird tire wear, and lots of odd vibrations.
If you can find the adapter you're looking...
My 2022 Lariat 502A Powerboost 6.5' box has a payload of 1430 lbs. Notable (heavy) options are moonroof, power running boards and spray in bedliner. It's a Fx4 as well.
In my opinion, go for it. Just be sure to test and tune the weight distribution hitch once you get it home. Dealers only install, they don't fine tune them...
Picked up my PB back in April 2022, with the Goodyear Wrangler 'AT' tires on it. Did around 26 mpg around town, 20 mpg on the highway. Switched to 20" wheels and K02s in the stock sizing, now I get about 24 mpg around town, 19.5 mpg on the highway. No other difference in acceleration or stopping...

With my old truck (2011 F150 FX4 Ecoboost x/Max Tow), I towed my 2014 Jayco 28BHBE (7041 lbs dry weight, 34' overall length) without issues across Eastern Canada and northern NY state, on highways and 2 lane roads. Very few white knuckle moments...

One you could look at is the Retrax One XR/Pro XR lines. They have integrated T-slots in the rails to accept the rack, no 'sandwiching' like the Elevate stuff.
