Overwhelmed by tire choices again

I had 285/65/20 KO2s on my 2018 XLT with 2.1 bilsteins and blocks in the back. Loved the look but definitely lost mileage and power. I also had the 3.5 eco.

Now I’m overwhelmed making a decision again for my 21. Now I have the 2.7 and 18 inch tires.

I don’t need a 35 inch tire and think that would be a bad idea, but I’m struggling to find an easy way to find sizes from say 33.5-34 inches. Weight seems to be heavier than KO2 and I’m assuming due to more material for same height on an 18 inch rim?

Really looking for opinions on where to focus my search.

285/70R18 would be my personal choice, im not a fan of stuffing a 35" on a truck with level/small lift. But thats for everyone to decide on their own.
