I am flipping through my drive modes and I was looking at the OZ Omega, Livernois, and others. When these tunes are installed, do they only work in standard drive mode. My truck (2023) displays sport, eco, tow, normal, snow, sand and offroad with the knob between the 4WD buttons.

How are these selections affected in the tune strategy. OZ seems to be the best overall and when I looked up all the dyno numbers, OZ was within the output of all the others and had better explanations.

My primary question is...do the tunes only affect the normal driving mode?

The driving modes are not different engine management calibrations like a tune is.

Instead, they are a combination of different 10r80 shifting strategies, throttle position mapping, and 2WD/4WD/4A where appropriate.

Most tuners will only put substantial effort into fine tuning one or two drive modes, usually Sport and Normal; but the drive modes all share the same engine calibration. You won't have 500HP in Sport mode, 480HP in Normal mode, and stock HP in Slippery/Wet.

Things like shift scheduling, torque converter scheduling, shift ramp times, shift pressures, shift characteristics, torque management, pedal sensitivity, upshift backout, and brake-on grade shifting can all be modified for specific sets of drive modes or individual drive modes.
