The easiest place to pick up the reverse signal is the 7 pin trailer connector, it is the center pin on the trailer side, I can get you the pin out for the rear of the truck side if needed
In theory you probably could, the smart hitch feature works with the scales to give you a gauge of sorts on the APIM, but you will likely need a ton of asBuilts from someone like @Snakebitten that has all of the factory gizmos and you will likely have a million codes for taillight circuit failures
